Summer and Picnics - Week 4 - Sweet Potato Fries - USA


The long awaited summer is here is here! With summer come long leisurely days spent outdoors - in the garden, at the park, at the beach..... That brings with it picnics and barbecues. What better way to celebrate summer than with light bites, finger food, cold soups, fresh salads and barbecues.

This week I am sharing my recipe for sweet potato fries. It goes wonderfully with the chicken burgers recipe I shared last week. Enjoy!

Sweet Potato Fries

Preparation time: 5 minutes

Cooking time: 20 minutes

Total time: 25 minutes

Ingredients (serves 4)

1.5 lbs/24 oz/680 g sweet potatoes, peeled, washed and cut into matchsticks

4 cups canola oil for frying

Method

  • Heat the oil in a deep pan over high heat, then fry the sweet potatoes uncovered in hot oil until crisp and golden brown (you may need to fry in several batches depending on the size of your pan).

  • Removed the sweet potatoes from the oil with a slotted spoon and drain on kitchen paper.
